Reverse Seared Steak Tacos


  • Wagyu Flank Steak
  • 1 tbsp olive oil
  • Sur Direct Dry Hot Chimichurri



Step 1: Prepare the Steak
Rub the Wagyu flank steak with Sur Direct dry hot chimichurri seasoning and olive oil. Extra salt and pepper optional.

Let it marinate overnight in the fridge for maximum flavour absorption.

Step 2: Reverse sear the steak
Preheat your Traeger Grill to 107°C

Place the seasoned steak on the grill and cook until the internal temperature reaches 52°C , for medium-rare.

Remove the steak from the grill and let it rest while you prepare the salsa and chimichurri sauce.

Step 3: Make the Chimichurri Sauce
If you have extra Sur Direct dry hot chimichurri seasoning, mix it with olive oil to create a sauce, few drops of vinegar and its done.

Step 4: Finish Cooking the Steak
Preheat a grill or a cast-iron skillet over high heat.
Sear the steak for 1-2 minutes on each side to develop a caramelized crust.
Remove the steak from the heat and let it rest for a few minutes before slicing thinly against the grain.

Step 5: Assemble the Tacos
Warm the soft tortillas either on the grill or in a skillet.
Place slices of the reverse-seared Wagyu flank steak on each tortilla.
Top with the cherry tomato salsa, a drizzle of chimichurri sauce, and a generous sprinkle of shredded cheese.

Serve immediately and enjoy your delicious Reverse Seared Steak Tacos!
