Empanadas

Ingredients:
- 500g minced beef
- 2 medium onions
- 3 hard boiled eggs
- 20 pitted green olives
- 10g of Sea salt
- 10g of Empanda Spice Mix
Instructions:
- Chop onions into cubes and submerge diced onions into cold water.
- In another bowl, season the minced meat with Empanada Spice Mix and salt.
- Boil eggs for six minutes, then cool, peel and chop.
- Turn pan to high heat, and add three tablespoons of cooking oil into pan.
- Drain - dry onions and place into hot pan, cook until translucent.
- Place meat in frying pan meat, reduce heat, and breakup any lumps
- Gently add eggs and olives and mix gently through.
- Remove from heat and cover.
The Dough:
- 500g plain flour
- 80g lard
- 10g fine salt
- 250ml of hot water
Instructions:
- Place lard into mixer.
- Add hot water into mixer, ensure lard is fully melted before next step
- Add salt and flour.
- Mix until all ingredients are combined.
- Dust bench with flour and place dough mix on top.
- Knead dough and cut into 20 equal amounts.
- Pre heat oven at 180 degrees.
- Roll on as thin as possible, cut with small plate to create circle mould
- Add two tablespoon of filling and close empanada
Tip:
1. Use the tip of a fork to close empanada
Beat egg and brush on top of closed empanada for golden look
These taste even better fried, quick but a little messy, and very delicious
