Empanadas

Empanadas

Prep time: 25 mins Ready in: 35 mins 

Ingredients:

  • 500g minced beef
  • 2 medium onions 
  • 3 hard boiled eggs
  • 20 pitted green olives
  • 10g of Sea salt
  • 10g of Empanda Spice Mix

Instructions:

  1. Chop onions into cubes and submerge diced onions into cold water.
  2. In another bowl, season the minced meat with Empanada Spice Mix and salt.
  3. Boil eggs for six minutes, then cool, peel and chop.
  4. Turn pan to high heat, and add three tablespoons of cooking oil into pan.
  5. Drain - dry onions and place into hot pan, cook until translucent.
  6. Place meat in frying pan meat, reduce heat, and breakup any lumps
  7. Gently add eggs and olives and mix gently through. 
  8. Remove from heat and cover.

The Dough:

  • 500g plain flour
  • 80g lard 
  • 10g fine salt
  • 250ml of hot water

Instructions:

  1. Place lard into mixer.
  2. Add hot water into mixer, ensure lard is fully melted before next step
  3. Add salt and flour.
  4. Mix until all ingredients are combined.
  5. Dust bench with flour and place dough mix on top.
  6. Knead dough and cut into 20 equal amounts.
  7. Pre heat oven at 180 degrees. 
  8. Roll on as thin as possible, cut with small plate to create circle mould
  9. Add two tablespoon of filling and close empanada

Tip:
1. Use the tip of a fork to close empanada
Beat egg and brush on top of closed empanada for golden look
These taste even better fried, quick but a little messy, and very delicious
